Roaster's Notes
When a coffee like the geisha washed from longboard coffee from Boquete, Panama, from the farm Windy Ridge arrived, I cupped the sample and I found out that there was very delicate notes and floral notes that I want to keep it in the cup. I approached that with a very simple roast profile where I keep it in the time short and not going to high temperatures. With that I was able to have the medium tartaric acidity that brings the red grape notes that is typical from the terroir of this coffee, with the medium sweetness like honey that comes from the washed process, and the medium low silky body like African red tea that comes from the variety Geisha. With that I created a beverage that can be prepared especially in a filter coffee, pour over and infusion coffees with a very delicate and balanced aftertaste that will create a pleasant sensation.

Untold Story
About The Farmer & Farm
Justin Boudeman is an intriguing individual who made a life-changing decision to relocate to Panama more than 25 years ago. With a degree in Natural Resource Management, a passion for wine, and a love for surfing, he laid the foundation for Longboard Coffee.
Justin exemplifies the role of a micro-producer, approaching every aspect of his three small farms with meticulous attention and a hands-on approach. By employing organic and bio-dynamic farming practices, he ensures that all farm inputs are sourced directly from the land. Each farm produces its own organic fertilizers and captures its own water.
Windy Ridge is mature and refined, wise yet exotic. The plantation is rooted deeply and is allowed to reach its desired height- often over 5 meters- and the perfectly ripe cherries are delicately harvested by ladder in the traditional style. At 1600 meters facing the Baru Volcano in the center of the prized Alto Jaramillo region, the exposed westerly orientation is bathed in afternoon sun, injecting an uncommon sweetness into the cherry.

"The first time I tried Justin's coffee (Misty Mountain Geisha Natural) was right before my brewers cup nationals in 2022. It was unforgettable and since then I used Longboard Coffee with Janson's Coffee for the championship and won the title. This time I tried the Windy Ridge Geisha Washed which brings amazing florals like coffee blossom, raspberry, cherry and high minerality in the mouth. Highly recommend using conical dripper, especially Brewista Tornado Duo with 1:16 ratio to bring out all of these fantastic descriptors."
